Chocolate Coconut Truffles

Need an easy dessert to take to a dinner party?  These truffles are raw, vegan and best of all no one will know unless you tell them! They freeze beautifully so I keep a few dozen in my freezer if I have a sweet tooth or need to throw together a dessert last minute.  Place two or three of them on a beautiful small glass plate and garnish with fresh raspberries and a sprig of mint!  Your guest will think you spent hours in the kitchen!

Ingredients:

  • 2 cups organic dates, pitted
  • 3/4 cup organic raw cacao powder
  • 3/4 cup organic raw shredded coconut
  • 1/4 cup organic raw cacao nibs
  • 2 tbsp water
  • 1 tbsp organic maple syrup
  • 1 tsp celtic sea salt 

Place all of the ingredients in a food processor and process until smooth.  The dough may form into a large ball.  If this happens, use a spoon to separate it and then pulse a few times.  Place the dough on a lightly oiled piece of parchment paper and with oiled hands, roll into a 1 inch diameter log.  Cut into 24 pieces and then roll into balls.  Roll the balls in either shredded coconut, toasted nuts or even cacao powder.  Place in small muffin cup liners and enjoy!  Store any left over truffles refrigerated in a sealed container
