Use this whole food, non-processed, sweetener in your recipes instead of honey, agave, maple syrup or coconut nectar that are all processed. It adds potassium, magnesium, fiber and a lovely hint of caramel flavoring to your recipes.
Ingredients:
- 1 cup medjool dates, pitted
- 1 1/2 cups warm water
- 1 tbsp fresh lemon juice
- 1 tsp vanilla extract
Place the pitted dates in a bowl and cover with the warm water, let soak for 20 minutes. Drain the dates, reserving ½ cup of the soaking water. In a blender, puree the dates, ½ cup water, lemon juice and vanilla extract until smooth. Stop frequently to scrape down the sides and continue blending until completely smooth. Store, refrigerated for up to two weeks.
